  1. Wash ribs in water. Put all the ribs in a deep pot. Add in enough water. Bring it to boil for 3-5 mins. Take out all the ribs and rinse under water.

  3. Add in ginger slices and green onion. Stir fry till aromatic.

  5. Prepare sauce: 1 1/2 tbsp light soy sauce, 1/2 tbsp dark soy sauce, 2 tbsp vinegar, 3 Tbsp rock sugar (you can reduce or add more sugar according to your taste). Pour sauce into the pan.

  7. Pour in enough hot water can cover all the ingredients. Turn to low heat and simmer for 30-40 mins.

There are still some bamboo leaves left in my fridge since last time I made zongzi (sticky rice dumplings). Last Wednesday was my resting day. No work, no need to go out. So I decided to use some to make Zongzi. And also because I really missed zongzi, could’t wait to have some.

This time, I only used sticky rice, no red bean. And for the filling, I went with the simplest one – red dates.

Only when I went to college in Fujian did I know that not all the people in China have simple zongzi with only sticky rice and red date inside. People in Fujian have the meat zongzi, with pork, mushroom, peanut, beans inside. And according to the different color, they call the meat ones Hongzong (red zongzi), and our simple ones Baizong (white zongzi).

Soy Sauce Chicken & Tamago Yaki Bento

Actually I cooked half soy sauce chicken. It’s quite simple and can be done by rice cooker.

  1. Put the half chicken (approx. 300-400g) in a big bowl. Sprinkle a little oil and light soy sauce. Massage the chicken to let the oil and soy sauce evenly spread. Let it marinate for 30 mins.
  2. Brush oil to the bottom of rice cooker. Put in 3 or 4 ginger slices, 1 or 2 stalk of green onion. Chicken on ginger and green onion.
  3. Pour in 1/2 cup water, 1/4 cup light soy sauce, 2 tsp dark soy sauce, and 2 tsp sugar.
  4. Cover the lid, press cooking button. When it’s done, flip the chicken over. Cover the lid and press button again.
  5. When it’s done again, don’t open the lid immediately. Let it be tightly closed for another 10 mins. After that, it’s ready to serve.

Teriyaki Chicken with Pan-Seared Portobello Mushroom

Teriyaki Chicken:

1. Prepare a whole boneless chicken leg. Sprinkle a little salt and black pepper.

2. Use the back of knife to hit chicken a bit.

3. Heat a pan on stove. When the pan is hot, put the chicken inside with skin side down. Flip over when the skin turns golden brown. Fry the other side till brown, too.

4. If there is much oil after sear, you can pour the oil out.

5. Add in 1 tablespoon light soy sauce, 1/2 tablespoon dark soy sauce, 1 tbsp sugar and 1 tablespoon honey. Let the chicken be coated with sauce.

6. Pour in hot water just enough to cover the chicken. Cover the lid and simmer for a while.

7. Remove the lid. Turn to high heat to reduce the sauce.

Portobello Mushroom:

Remove the Portobello mushroom’s stem first and wash clean.

Oven Roasted Vegetables

I roasted potato, cauliflower, carrot by oven before. I always wanted to try roasting different kinds of vegetables at one time. And I did it today.

  1. Preheat oven to  200 Degree C.
  2. Prepare vegetables. I chose potato, carrot, cauliflower, broccoli, onion, baby corn, mushroom and cherry tomatoes.
  3. Wash them and cut. For potato, carrot, cauliflower and broccoli, they may need longer time to be cooked. So they must be in smaller size. While onion, baby corn, mushroom and cherry tomatoes. They should be in larger size.
  4. Cover the baking try with aluminum foil. Place vegetables over it. Drizzle olive oil. Sprinkle salt and black pepper. I also spread some dried herbs. And add 2 cloves of garlic. Gently toss a bit.

Into the oven and bake for 10 mins.

Flip them over. and Lower heat to 180 Degree C. Bake for another 10-15 mins.

Lemon Butter Sauce Salmon

It’s actually very simple to make.

  1. Cut salmon fillet into smaller strips.
  2. Season with salt and pepper.
  3. Heat a pan. Cut in 2 Tbsp butter.
  4. When butter melts, place salmon in with skin side down. Fry for 2-3 mins.
  5. Flip over and fry the other side for 2-3 mins.
  6. Squeeze in a little fresh lemon juice. Add in 2 tbsp water and simmer for 2 mins.
  7. Add in 3 tbsp milk or 2 tbsp cream, simmer for another 1 more min.
  8. Dish the salmon out. Keep heating the sauce till reduced.

Salmon in the plate and sauce over it.

The sauce also goes well with pasta. So I made it with spaghetti for my husband’s bento.

  2. Put all the ox tail into a deep pot. Add in enough water covers the tail.
  3. Turn to high heat. Bring it to boil. Take all the oxtail out. Wash in water again. To remove all the dirt.
  4. Place all the oxtail into the pot again. This time, add in much more water, cos we need to cook it for hours.
  5. High heat first, skim the soup to remove all the dirt. Turn to low heat and simmer for 2 hours.
  6. After 2 hours, skim the soup again to remove the fat.
  7. Lid on and simmer for another 1 hour.

Red Wine Oxtail Stew

I actually wrote a blog about red wine oxtail stew. But somehow it disappeared. Today, I cooked it again. So I rewrote it.

  1. Prepare oxtail. I used about 600g, 4 pieces. Place them in a big bowl. Season with salt and pepper. Dust them with flour. Just let them be coated with a thin flour layer is enough.
  2. Heat a pan. Add in oil. Fry oxtail with patience till each side turns beautifully golden brown. Transfer them into a deep pot.
  3. Prepare vegetables. I used 2 carrots (chopped into small chunks), 1 onion (diced), 1/4 head of cabbage (chopped into medium slices), and 3 chopped cloves of garlic.
  4. Use the same pan (the one used to fry oxtail) to fry vegetables. Fry for, let’s say 2 mins, or till they become slightly soft. Add in 2 tbsp flour, later while slow cooking, it will thicken the soup. Stir fry evenly.

Imposter / “Fake” Amano Shrimp that Disappeared Totally

I just realized that 2 of the previous shrimp I bought may not be “true” Amano Shrimp.

Basically, they lack the distinctive dots / dashes of true Amano shrimp. See also this site on an example of fake Amano shrimp: https://www.plantedtank.net/forums/88-shrimp-other-invertebrates/570946-amanos-born-their-side-top-markings.html

The shrimp that I bought (suspected imposter Amano shrimp).

You can also see the shrimp in my YouTube video (around 2m 43s mark):

Despite it being an “imposter”, it behaved quite similar to Amano shrimp, eating algae and cleaning up the tank. According to some online sources, it could be Malayan shrimp which is also quite probable due to the locality (Malaysia is just next to Singapore). Malayan shrimp have different colors, and the clear colored ones look very much like Amano or Yamato shrimp.

Disappearing / Missing Shrimp

What is interesting about this shrimp (fake Amano) is that it totally disappeared from my fish tanks — twice. The first time, it disappeared from an open tank with just neon tetras in them. The second time (another shrimp of the same type), it totally disappeared from a close lid tank with just a honey gourami and 2 horned nerite snails. I did not find their body anywhere inside or outside the tank.

What I suspect is that they died soon after molting (I did see them molt), and then got totally eaten up by the small fish as shrimp sashimi. Or possibly they have a very fast rate of decomposition and can essentially “dissolve” into the water overnight.

Repair Macbook Audio Hardware Issue (Solved!)

Recently, I experienced a rather strange problem with my 5 year old Macbook Air: The audio stopped working completely. Even plugging a headphone into the earphone jack produced no sound. Going to the Sound Preferences produced the classic error of: No output devices found.

Upon googling online, I tried most, if not all, of the recommended fixes:

  • Reset NVRAM
  • Reset SMC
  • Update to latest iOS
  • Create a testing account on safe mode
  • Restarting the computer
  • Apple Hardware Test (Produced an error code of VFF001: There may be an issue with the audio hardware)
  • Plugging in and out of the earphone jack multiple times
  • Cleaning the earphone jack by blowing air/ vacuuming dirt
  • Calling the Apple Support hotline

None of the above helped, unfortunately. Hence, my situation was in the most serious category of Audio problems for MacBook. Online sources highly suspected that it was a hardware issue (and hence required a expensive repair).

First, I stumbled upon Solution 1:

Solution 1 to Macbook “No Output Device Found” Audio Problem

The first solution is to use a USB to Audio adapter such that you can direct the audio through your USB port to your earphones. It worked very well in my case. There should be many brands such as Sabrent (listed below), or Flujo, etc.

For speakers, a similar solution is USB speakers, such as the one below.

Solution 2 to Macbook “No Sound” Problem

Afterwards, I encountered a miraculous Solution 2 to my Macbook Air audio problem. I booked a “Genius Bar” appointment at the official Apple Store. The support staff entered a mode called “Triage Mode” — which apparently only Apple staff can enter. She performed a diagnostic test that indicated that everything was working correctly. Upon shutting down and restarting, I heard the characteristic chime of Apple start up sound, something which I have not heard in weeks.

Thereafter, the audio problem miraculously solved itself, the “Internal Speakers” showed up once again as one of the output devices! The staff herself was surprised. This is quite miraculous as every source I read indicated that it was a hardware problem that could only be resolved by replacing the “logic board” or some other hardware component of the MacBook.

This June, while my husband and I went back to China to visit my family, we also went to Harbin for a short trip with my sister and mom.

Harbin is located in northeastern China. It’s the capital of Heilong Jiang province, which is also the northern most province in China. The best season to visit Harbin is actually winter, cos it will be the white world and it’s famous for ice sculptures.

Summer is the second best season to visit Harbin. You can escape the hot summer and enjoy the cool air there.

Saint Sophia Cathedral is the landmark of Harbin.

It was built in 1907. It’s definitely one of the most beautiful church in China.

Unfortunately, it was under maintenance during our trip. So we were not able to go inside.

It’s a breathtaking architecture no matter in the day or at the dawn or in the evening.

Do students really need tuition in Singapore?

In ideal conditions (good school teacher, good study habits of student), no tutor is needed.

Sometimes, the student is unfortunately in a non-ideal condition. I have tutored students from top “branded” IP schools who encountered the following:
– School teacher didn’t teach essential math concepts/formulae that are subsequently tested in the exam.

– School teacher didn’t have time to cover the topics. As a result, they only finish the syllabus one week before the exam. (Or worse, did not manage to finish the syllabus before the exam)

– Too hectic and busy CCA training/competitions. As a result, the student did not build a solid foundation during early years of Secondary 1-3, and is only seriously studying full-time in Secondary 4 (similar for JC Year 1 vs Year 2).

The above points can’t really be controlled, it is sometimes a matter of luck whether the school teacher can teach well or not. In unlucky events such as above (which is quite common actually), a tutor is recommended.

兼职员工是否受到劳工法的保障?

根据 2010 年雇佣(兼职员工)条例,兼职员工是指那些工作时间占全职员工工作时间的30% 至70%的人士。少过全职工作时间的30%属于散工,并不在此条例管辖范围。

在2010 年雇佣(兼职员工)条例下,兼职员工可享有公积金、社险、公假、年假、病假、休息日和超时津贴。
若雇主没有提供福利给兼职员工和不遵守2010 年雇佣(兼职员工)条例,违例者一旦被定罪,每项罪行可被罚款最高一万令吉。
兼职员工所受到的保障:

公积金和社险:雇主必须替兼职员工缴付公积金和社险。
有薪公共假期: 兼职员工有权享有不少于7 天宪报公布的有薪
公共假 期:其中四天必须是:国庆日,元首诞辰,苏丹或州元首 华诞或联邦直辖区日及劳动节.

And I’m not referring to scoring better than your neighbours or nephews and nieces. Your kids don’t care about that – and you shouldn’t too. Focus on the important things.

What are they? In this article, I’ll be sharing with you, parents, what will motivate your kids to want to be good at maths that are not grades.

Help Your Kids Be Their Own Boss

Many kids have entrepreneurial blood and a knack for sales. Look at how well they persuade you to get what they want. Remember the times where they came up with the most ingenious of ideas – you were surprised; thought it could even become a business.

If your kids have a tendency to solve problems in the most creative ways possible and have a sense of leadership, you should get excited. They might be the next CEO of Amazon!

Math is crucial in starting and running a business. Whether it is running an eCommerce store (which is very profitable in 2019 and beyond) using platforms like www.shopify.com.sg or selling their artistic services online, math is a must.

Kids are motivated by things other than grades

You might think that this isn’t exciting for your kids.

Maybe they never thought it would be possible… Maybe all they knew was just the linear way of life…

What if they were interested in starting their own mini business? What if they got excited to be good at maths, motivated by the fact that they could apply to real life?

Now that I’ve sparked something in you, you might be thinking ‘Why does running a business need math?’

Being Good At Maths Can Help Your Kids Start Their Own Business

Reason #1: Doing their taxes

I wish my parents taught me how to do my taxes and to avoid ‘savings plans’ by a certain insurance company. These are the important things that will matter to your kids when they are adults – something that is missing in schools and not taught by most parents.

Being good at math will ensure that they don’t get lost in all the numbers, percentages, appreciation, depreciation, interest, and more. With a good foothold in working with numbers, your kids will not hate doing their taxes and avoid any penalties that come with incorrect tax payment or filing.

Reason #2: Ensure they are always profiting

Starting their own business means they have no one to tell them how much they need to charge to have a good amount of profit. No teacher to tell them that they are spending way too much on unnecessary things and blowing out their expenditure. They have no tutor to guide them saying ‘to meet your financial goals and achieve sustainability in Singapore, you need to get $XXX a year.’

Running a business well demands good math skills to calculate and plan the finances.

Now, your kids have a teacher, they have you and a math tutor. Bring math in real-life situations and you’ll start to see an increase of drive in their eyes.

I have not managed to successfully find the option to speak to a human Singtel Chat Agent through the hotline, if you know the method please comment below!

Also, do not bother speaking to “Shirley” on the Contact Us page (https://www.singtel.com/contact-us). It is quite clear Shirley is not a human, but just a bot.

The Trick to Chat with a Human Singtel Customer Officer

  1. Go to the Contact Us page.
  2. Click on Ask Shirley
  3. Type “can i chat with customer service officer”.
  4. Type in the category of your question, e.g. “billing”, “voucher”, etc.
  5. Whatever Shirley says, just click “Submit Enquiry”
  6. Bingo! You are now connected to a Human Chat Agent!

From trial and error, this is the easiest way to get to speak to a Human Singtel Customer Service Officer/ Chat Agent. There is no direct link to chat with a Singtel Customer Representative.

For the above method, you don’t even need to login to your Singtel account. But you may be asked your name and NRIC for verification purposes.

How to contact Singtel Live Chat Agent

At least 2 people have managed to contact Singtel’s live chat agent using the method above, and commented positively below. We are glad to be of help!
